My research examines the nutritional and human health impacts of consuming fresh and processed animal muscles (meat and fish) and meat analogues (e.g., plant-based, insect-based), with a strong focus on gut health. Through in vitro gastrointestinal digestion models and in vivo rodent feeding trials, we investigate key parameters including oxidative stability, nutrient bioavailability, gut microbiota composition, gut histology, fecal metabolites, oxidative stress, and inflammation, in collaboration with other scientific partners.
